Grace's Oysters Under Fire

It's hard to beat a raw oyster with a little lemon juice and a drop of hot sauce but you may like to try this.
 
 
Preparation Time: 10 minutes + Shucking!
Cooking Time: 10 minutes
 
12 Oysters in their shells 
1 cup flour 
4 tablespoons Butter 
4 tablespoons dry white wine 
2 tablespoons lemon juice 
2 tablespoons shallots finely chopped 
1 teaspoon Grace Hot Pepper Sauce 
1 teaspoon Paprika 
Salt and freshly ground Black Pepper to taste 
 
First shuck your oysters (the official term for liberating them from their shells), remember to hang onto the shells. Mix the flour, salt and pepper and coat each oyster with the mix.
 
Heat butter in a heavy bottomed pan and sauté the oysters until lightly browned on both sides. Remove oysters and place in shells. Add the wine, paprika, lemon juice and shallots to the pan the oysters were sautéed in and heat for several minutes stirring constantly. Pour the sauce over oysters and place a drop or two of Graces Hot Pepper Sauce on each oyster.
